1)So Donald Trump has been banned from Canada, with our Prime Minister Justin Trudeau signing off and declaring him as “racist.” Go Justin go!!! I doubt Trump will win as president, with the number of people he’s offended, he’s being deemed the next Hitler (which is way too far fetched, he never acted out on any of his words.)
2)On the other hand, there were many Syrian refugees who were welcomed into Canda earlier this year, and are now finding a new life here!!
3)Valentine’s Day is coming up!! Do you really want to know what your significant other is looking for? This giant teddy bear who will comfort them while you pig out on Oreos (we all know, you don’t have to hide it 😉 )
4)This site is where photographer Mikael Theimer posts super cool black and white pictures of people around the world! Check it out!
5)Onto this recipe!! When I made it, it wasn’t just one bun, but now I have altered the recipe for a single serving!
Quote of the Day
“Accept the challenges so that you can feel the exhiliaration of victory.” -George S. Patton
Word of the Day
Marmoreal (adj.): of, relating to, or suggestive of marble or a marble statue especially in coldness or aloofness (Comedies such as this made opera look marmoreal.)
-6 tablespoons whole wheat flour
-1 tablespoon xylitol or coconut sugar, divided
-1/4 teaspoon baking powder
-1/8 teaspoon baking soda
-2.5 tablespoons almond milk
-1/16 teaspoon salt
-1/2 teaspoon apple cider vinegar
-2 tablespoons melted coconut oil, divided
-1.5 tablespoons coconut sugar
-1/2 teaspoon ground cinnamon
For the glaze:
-1.5 ounces vegan cream cheese
-2.5 tablespoons powdered xylitol (date or coconut sugar may work)
-Splash of almond milk
Preheat oven to 375 degrees. Mix flour, 1/2 tablespoon xylitol, baking powder, baking soda, and salt. In another small bowl, mix the milk, vinegar, and 1 tablespoon oil. Add the wet ingredients to the dry and mix until a dough forms. On a floured surface, roll out the dough into a small rectangle, and pour the remaining 1 tablespoon oil on top of it, followed by the coconut sugar, cinnamon, and remaining 1 tablespoon of sugar. The roll up the dough into a cylinder/cigarette shape, and then take one end and fold it in, making a circle out of it. Bake in a single serve baking dish. Meanwhile, mix the glaze ingredients together in a plate. When the cinnamon roll comes out, let it cool for 10 minutes, then pour the glaze on top. Serve warm!
