I used to dream about the Bulk Barn. It sounds ridiculous, but I always dreamed about being able to raid the Bulk Barn and take everything home. That was analogous to a bank robbery (for me.) Anyways, when I did get to go to Bulk Barn the next couple times that year, I restrained myself from buying everything in sight. Once I brought $140 worth of food, and oh boy, my mom was just about ready to lock me in the garage forever.
One of my favourite things there are the nut clusters, of which there are numerous different kinds. The one I made today is kind of like a crunchy, “buttery” taste, and could substitute for those expensive Bulk Barn nuts. Plus, it’s cheaper to make, and you won’t feel guilty about the price when you eat it by the handful!

-1/2 cup RAW almonds and cashews mix
-3 tablespoons xylitol, cane sugar (I’m not sure if coconut sugar or date sugar would work. Regular sugar might work too.)
-2 tablespoons roasted cashew butter
-2 teaspoons regular coconut oil (not virgin/extra virgin)
-salt, to taste
Put the nuts in a shallow bowl that can be put in the freezer. In a heat proof bowl, melt the oil and the cashew butter, and then pour over the nuts, coating them thoroughly. Right away, toss the sugar in and any salt in, and mix it to coat the nuts. Put it in the freezer for an hour to harden, and then hit the nuts to break them apart, with a wooden spoon or utensil. Serve! Keep refrigerated.
