- 1 medium ripe (117g) avocado peeled and pitted
- 2 tbsp (12g) cacao powder
- 4 tbsp (60mL) maple syrup
- 1 tbsp oat milk
- 2 tbsp (30g) vegan semisweet chocolate chips melted
- ΒΌ tsp vanilla extract
- pinch pink salt
Add all ingredients to a high speed blender or food processor. For the maple syrup, start with 2 tbsp.
Blend everything until it looks well-mixed and like chocolate pudding. Taste the pudding, and if desired add the remaining 2 tbsp of syrup in.
Refrigerate it for an hour or two if you prefer cold pudding, or you can eat it right away. Top with a dollop of coconut whipped cream if desired, before serving.
