Preheat oven to 350 degrees F.
Grease the bottom of the baking tray with extra vegan butter.
In a large bowl, mix together the flour, ½ cup of brown sugar, oats, pecans and salt. Stir in the butter.
Place the apples at the bottom of the baking dish and toss with the remaining ¼ cup of brown sugar, cinnamon and lemon juice.
Spread the apples over the base of the baking dish in an even layer.
Press the crumb mixture together to create clumps, then sprinkle it over the apples.
Bake for 1 hour, until the apples are soft.
Once the time is up, remove the baking dish from the oven. Allow it to cool on a heat proof surface for 10-15 minutes.
Then cut into 6 servings, topping each serving with vegan cool whip or ice cream. Enjoy!
