Homemade Vegan Triple Berry Granola Recipe

This delicious homemade Vegan Triple Berry Granola recipe is a burst of summer berry explosion and antioxidants from three types of berries!

Ingredients
  

  • 2 tbsp maple syrup
  • 2 tbsp refined coconut oil
  • ½ cup quick-cooking oats
  • ½ tsp vanilla extract
  • 2 tbsp dried strawberries
  • 2 tbsp dried blueberries
  • 2 tbsp dried raspberries or cranberries or cherries
  • tsp pink salt

Instructions
 

  • Preheat oven to 325 degrees F.
  • If the coconut oil is not melted, place it in a heatproof bowl in the microwave for 20 seconds at a time to melt.
  • In a medium-sized bowl, add in the melted coconut oil, along with the maple syrup, vanilla and salt. Stir to combine.
  • Stir in the oats. Lastly, stir in all the dried berries.
  • Line a baking tray with a sheet of parchment paper or a silicone mat. Spread the granola out evenly on it. Bake for 15-16 minutes, until the oats are golden brown.
  • Remove from the oven and allow the granola to cool for 20 minutes on a heatproof surface. It will harden as it cools.
  • Once it's cooled down, add it into a bowl with your favorite plant-based milk and fresh berries, or store for later. Enjoy!

    • Store in an airtight container at room temperature for up to two weeks.
