Recently, I stepped foot into the bustling streets of Toronto. Through the bitter wind and biting cold, I braved a couple days out to the heart of the city. From a flock of ice skaters celebrating the holidays to running through slush hunting down multiple Ubers, it was quite worth it. Also tried ramen for the first time!

After waiting around with a couple friends for a seat at a chic, high in demand restaurant – many of those coming in had made reservations – and after spotting the slightly too pricey menu combined with the waiting period – we decided to leave in favor of a scaled down, top 5 ramen noodle restaurant mid-city. A warm bowl of soup and noodles, mainly non-vegetarian save for the one item I was able to order. It’s a cuisine that I don’t eat often enough!

Going Back Home

At last, climbing aboard the frosty Greyhound bus, destined to go back to my hometown with my sister behind me, I took a seat and instantly fell asleep. Opening my eyes here and there throughout the bus ride showed lands of snow laden fields, empty and dead where crops once grew and will grow again. My eyes opened as my sister nudged me to let me know we were close to home. It was a bit dark, and getting darker as we got to the city’s borders. All the way to the bus terminal, where we would be getting picked up my family. They were bored out of their minds without our liveliness at home!

As my eyes passed over street after street of settled snow and a handful of pedestrians scattered about – running home for dinner, on a phone call, walking the dog – the usual – the sun started to slowly fall behind the vacant buildings. As we entered downtown, little pop ups shops for all sorts of knick knacks passed me by. Pubs, restaurants, bars, a record store, bubble tea, poutine, shwarmas – reminiscent of more than a few memories.

Seeing Family Again

The oncoming rush of passengers as they erupted and sprang from their seats to hustle their way down the aisle to pick up their luggage and head home to their families woke me from my daydream. I slowly got up and was one of the last to exit the bus. (Albeit for the passengers staying on to head to the next city). Over was the amusement from the last few days, and the face of existence had hit hard. Back home? More like a temporary stay while I plan another vacation!

It’s definitely on my list of go-to chocolate recipes that doesn’t require gourmet vegan items. No need for vegan sweetened condensed milk, whipping cream or other items!

Gluten Free, Dairy Free, Oil Free, Added Sugar Free: Unlike regular brownies, this healthy brownie recipe is devoid of almost all ingredients that you might need to avoid for allergies or other reasons. Dairy, fish, eggs, flour, oil, refined sugar and peanuts are not used here, just to name a few.

The dates are an essential ingredient in these fudgy chocolate brownies that bind the dough. But they also provide lots of natural sweetness, so there’s no other sugar added!

And even though this sweet treat does use walnuts, there are many different substitutions in the substitutions section below, if you have a nut allergy or are looking to avoid nuts in general.

Substitutions

Medjool Dates: The dates take the place of a liquid sweetener, like maple syrup. But now, they’re all natural and full of fiber, providing natural sugar to these brownies!

For best results, use Medjool dates. These type of dates are the most caramel-like and softest for blending in a recipe. You can also use Deglet Noor dates. Make sure the dates don’t have any seeds before using, and are very soft to the touch. You may also try using soft, plump black raisins.

Raw Cacao Powder: Cacao is the raw, unprocessed version of cocoa powder. You can also use regular unsweetened cocoa powder, which is the type commonly used in brownie recipes.

Raw cacao can be found at health food stores, online, or in the natural foods aisle of the grocery store.

Raw Walnuts: Walnuts provide a lot of healthy fats in this easy recipe, making the brownies taste richer. To substitute, use dry quick-cooking oats or rolled oats, or a different kind of nut. Raw pecans, almonds, macadamia nuts, cashews, almond flour or almond meal. Blanched almonds or raw cashews would be the best replacement.

  • Blending these brownies may require you to stop the blender or food processor after a short time. Then scrape down the sides to continue blending. You may have to do this a few times to have the dough really come together well, depending on the power and size of your blender.
  • Mix in vegan chocolate chips by hand to make these brownies double chocolate!
  • Melt vegan semisweet or dark chocolate chips to make frosting on top of these brownies – it’s the perfect snack that doubles as dessert for chocolate lovers!

Ingredients
  

  • 13 tbsp Medjool dates pitted
  • cup (33g) raw walnuts
  • 3 tbsp (18g) cacao powder

Instructions
 

  • Blend together all ingredients until a dough forms. 
  • Pat down into a baking pan lined with parchment paper, making the dough medium-thick to form 4 brownies.
  • Use a pizza cutter or a sharp knife to cut into 4 pieces.
  • Refrigerate to make the brownies chewier, or eat them right away!
