Alert: This is not your regular cookie dough! Today, we’re making all vegan (and possibly raw vegan if you use cocoa nibs) no bake cookie dough bites! Hands up if you would get intense cookie dough cravings and eat raw cookie dough straight out of the bowl before you would have a chance to bake it? Or maybe not … maybe it was licking funfetti cake batter off the whisk, picking out walnuts in banana bread batter, or eating spoonfuls of oatmeal raisin cookie dough that did it for you?

But maybe it’s neither of these, because you’re a responsible adult who doesn’t eat raw flour mixed with vegan butter as dessert. Thankfully I never got E. Coli from it, although the days of eating raw flour are (mostly) over. The good thing about being vegan was that I did avoid eggs anyways, so ingesting raw eggs and getting harmful bacteria from that too wasn’t an option anyways. But for me, making a batch of chocolate chip cookies was the best part of my childhood (one of, I did more than just eat cookies). Especially on a rainy day, it was just the thing to do. Eating the cookie dough in between making the cookies was just as special as the cookies themselves!

Forego the Flour

Nowadays, I do tend to avoid raw flour (raw all-purpose flour, that is) that and use either gluten free all purpose flour, almond flour, oat flour or other options in replacement so it’s a safe-to-eat raw edible cookie dough recipe. Or, if I opt for eating all-purpose flour based cookie dough, I buy brands at the store that offer safe-to-eat raw cookie dough (so they use heat-treated flour). These energy bites are one of my favourites though, because they’re packed with nutrition and so easy to make!

A hassle-free, grab-and-go kind of deal when you crave something sweet but don’t want to make a tub of the ol’ butter-filled cookie dough. They’re just so soft and chewy, it makes you want to down the entire recipe. So I recommend to just make a double batch of these no bake treats, you’ll be grateful you did!

Satisfied Cookie Dough Lovers: These healthy cookie dough balls will leave cookie dough fiends satisfied because of the richness of the dough balls. It’s that feeling of biting into a thick cookie dough chunk (or many) but without getting that stomachache afterwards. It’s a simple recipe and you can easily find the ingredients at (mostly) any grocery store.

Refined Sugar Free: I go nuts for anything cookie dough flavoured and refined sugar free (not to mention, gluten free AND vegan). Why? Because I can feel satisfied that I’m not downing something that isn’t good for me. On the contrary, the ingredients in this recipe are full of healthy vitamins and minerals!

Change the Flavour: The first thing I did once I finished the first batch was to make a second batch of these for keeping as my snack for the week! But these don’t necessarily have to be filled with regular chocolate chips. You can choose peanut butter chips for a Reese’s Pieces Ball, add multiple types of chocolate to make it triple chocolate, or add rainbow sprinkles to make it funfetti!

Substitutions

Dates: These hold the dough together. I would not recommend substituting these for anything else.

Almond Flour: You can use cashew flour (or grind raw cashews into a powder in your spice grinder). Oat flour is another option but it won’t taste as “buttery.” Almond flour has a smooth buttery texture in energy balls.

Cashews: You can use the same amount of almond flour or grind pecans or another nut.

Oats: You can use raw almonds, cashews, almond flour or almond meal.

Chocolate Chips: You can find semisweet or dark chocolate chips at every store, but check the ingredients to see if they’re vegan or not. You can also use cocoa nibs instead to make them fully “raw” energy balls. If you’re into all types of chocolate, try a mix of dark, semisweet and white chocolate chips! Or even … whoop whoop … peanut butter chips for a Reese’s twist?!

Vanilla Extract: This gives the flavour that cookie dough has – vanilla is a must! I use Madagascar vanilla extract without alcohol. It’s a pure extract (and much thicker) than dollar store brands of vanilla extract that are diluted.

  • Drizzle melted chocolate over top of these bites, then let it harden on top by freezing or refrigerating them. This could even make cookie dough cake pops if you put a cake pop stick in there!
  • Add peanut butter, almond butter or another nut butter drizzle with some granola, seeds and nuts for a loaded energy ball and a pre-workout snack!
  • For best results, blitz together the cashews and oats in a spice grinder to make sure they are powdered before blending them with the remaining ingredients in a food processor or blender. This ensures there are no chunks in the these no bake cookie dough balls, and the dough is fully smooth.

Equipment

Ingredients
  

  • ½ cup dates
  • 3 tbsp almond flour
  • 3 tbsp raw cashews not roasted or salted
  • 2 tbsp dry rolled oats
  • 1 tbsp vegan dark or semisweet chocolate chips (whichever is preferred) to make this recipe raw, use cocoa nibs instead of chocoate chips
  • ½ tsp vanilla extract
  • pink salt a pinch to taste

Instructions
 

  • Blend the cashews first, to make sure they are a powder. Then add the oats, making sure it becomes a fine powder.
  • Then add the rest of the ingredients, except the chocolate chips, until a dough is formed and there are no dates/nuts chunks remaining.
  • Remove the mixture from the blender. Stir in the chocolate chips by hand.
  • Shape the dough into 6 equal balls.
  • Eat them right away, or store them in the refrigerator in an airtight container for later.
