Combine chia seeds with the other chia pudding ingredients in a medium bowl. Set this in the refrigerator for 15 minutes.
For the Apple Topping
In a small saucepan over medium-low heat, mix together the diced apples with the other apple topping ingredients using a rubber spatula.
Cook this mixture for 5-7 minutes, until the apples are softened.
Turn off the heat and set the saucepan aside. Once the chia pudding in the refrigerator is set, begin to assemble the layers.
Begin by adding half of the chia pudding mixture to a cup, followed by half of the apple topping. Repeat this once more to use up the remaining pudding and topping.
Sprinkle on optional pecans, walnuts and other add-ins to the top of the pudding.
