Apple Pie Chia Pudding

This Apple Pie Chia Pudding is a healthy fall-inspired breakfast recipe with a hot topping made of cooked apples and warm spices!

Ingredients
  

For the Chia Pudding

  • 5 tbsp chia seeds
  • 1 cup oat milk
  • 1 tbsp pure maple syrup optional
  • ¾ tsp vanilla extract
  • pinch pink salt

For the Apple Topping

  • 2 medium red apples cored and diced
  • 8 tsp coconut sugar
  • ½ tsp ground cinnamon
  • tsp room temperature water

Instructions
 

For the Chia Pudding

  • Combine chia seeds with the other chia pudding ingredients in a medium bowl. Set this in the refrigerator for 15 minutes.

For the Apple Topping

  • In a small saucepan over medium-low heat, mix together the diced apples with the other apple topping ingredients using a rubber spatula.
  • Cook this mixture for 5-7 minutes, until the apples are softened.
  • Turn off the heat and set the saucepan aside. Once the chia pudding in the refrigerator is set, begin to assemble the layers.
  • Begin by adding half of the chia pudding mixture to a cup, followed by half of the apple topping. Repeat this once more to use up the remaining pudding and topping.
  • Sprinkle on optional pecans, walnuts and other add-ins to the top of the pudding.
  • Enjoy!
