  • High-speed blender or food processor

Ingredients
  

  • cup raw cashews
  • ¼ cup coconut flour
  • ¼ cup dried apricots
  • 5 large pitted dates
  • tsp vanilla
  • ¼ tsp turmeric powder
  • pinch pink salt
  • 2 tbsp desiccated coconut for rolling

Instructions
 

  • Add together all ingredients into a blender cup or the bowl of a food processor, except the shredded coconut for rolling.
  • Blend it until a sticky dough forms. You may have to occasionally stop the blender and scrape down the sides.
  • Shape the dough into 9 balls.
  • Roll in the 2 tbsp coconut.
  • Enjoy!
