- ⅓ cup raw cashews
- ¼ cup coconut flour
- ¼ cup dried apricots
- 5 large pitted dates
- ⅛ tsp vanilla
- ¼ tsp turmeric powder
- pinch pink salt
- 2 tbsp desiccated coconut for rolling
Add together all ingredients into a blender cup or the bowl of a food processor, except the shredded coconut for rolling.
Blend it until a sticky dough forms. You may have to occasionally stop the blender and scrape down the sides.
Shape the dough into 9 balls.
Roll in the 2 tbsp coconut.
