Preheat oven to 425 degrees F.
In a baking tray lined with parchment paper, lay out the potato wedges in a single layer. Drizzle the olive oil over top, followed by a sprinkle of salt, pepper and Italian seasoning. Eyeball the seasoning as desired, then toss the potato wedges to coat the seasoning all over.
Evenly spread the wedges on the baking tray, then place in the preheated oven for 40 minutes, turning the baking sheet around halfway through to ensure even baking.
After 40 minutes, remove the potatoes from the oven. Evenly drizzle the pasta sauce, then half the cheddar and mozzarella cheese, then the vegetables, followed by the remaining half of the cheese over top of the fries.
Bake again for another 10 minutes.
Once the potatoes are done, remove from the oven and place on a heat-proof surface. Top with red pepper flakes, if you like it spicy!
