These Raw Vegan Butter Pecan Cookie Bites are inspired by Butter Pecan Sandies, but in raw form with dates, pecans and raisins!

  • High-speed blender or large bowl food processor

Ingredients
  

  • ¾ cup soft Medjool dates pitted
  • ½ cup raw pecans
  • 2 tbsp plump black raisins
  • ½ tsp vanilla extract
  • pinch pink salt
  • 2 tbsp raw pecans crushed // for rolling in

Instructions
 

  • Toast all the pecans over medium-high heat in a saucepan. Let them get very browned to the point where you can feel it's crispy and the pecan flavor is coming out, but not burned. This will take a couple minutes, but watch them closely as they can burn easily.
  • Blend all ingredients except the raisins and the pecans for rolling.
  • Add the raisins in and quickly pulse them for 1-2 seconds.
  • Shape the dough into bite-sized balls.
  • Roll the balls in the extra crushed pecans.
  • Enjoy!
