Vegan Oreo Dessert Chocolate Pudding Parfait Cups

For the Oreo Layer
- 6 regular Oreos finely chopped
- 1 tbsp vegan butter melted
For the Chocolate Pudding
- ¼ cup xylitol
- 2 tbsp cacao powder
- 1 tbsp cornstarch
- 1 cup unsweetened oat milk
- ½ tbsp vegan butter
- ½ tsp vanilla extract
- ⅛ tsp pink salt
For the Chocolate Pudding
In a saucepan, whisk together the xylitol, cacao, butter, cornstarch, salt and milk over medium heat.
Bring to a boil, then reduce the heat to low and whisk for 2-3 minutes. After this time, remove from the heat and stir in the vanilla.
Let the pudding cool for a half hour at room temperature. Then place it in the refrigerator for an hour.
Putting It All Together
After the pudding is chilled, separate it into four even servings. Additionally, separate the Oreo layer into four servings as well.
In two glass cups, take one part of the Oreo layer, followed by one part pudding, then a layer of whipped cream (eyeball as thick of a layer as you like).
Repeat this once more to have a parfait with six layers. Top with more Oreos. Repeat this layering with the second cup as well.
Serve. Enjoy it fresh!
