- 10 tbsp + 2 tsp extra-virgin olive oil
- 8½ tsp fresh lemon juice
- ½ tsp lemon zest
- 8 tsp water
- 1¼ blocks extra-firm tofu
- 3½ tbsp white wine vinegar
- 1 tbsp fresh parsley
- ¼ cup olive brine
- 2 medium cloves garlic finely grated
- 1½ tsp dried thyme
- 1½ tsp dried oregano
- 1 tsp dried basil
- ⅛ + ¾ tsp black pepper
- ½ tsp salt
- pinch red chili flakes
Blend together all ingredients in a blender until a sauce forms. You may have to stop the blender and scrape down the sides as needed, to help it blend.
Pour the sauce into a serving plate. Use the back of a spoon to smooth it out and garnish with fresh herbs or desired toppings. (See the "More Recipes" section above for Roasted Herb Tomatoes that were delicious on this dip)!
Drizzle some optional extra virgin olive oil before serving. Then enjoy with pita chips, fresh veggies and all your favorite dipping items!
