  • High-Speed Food Processor or Blender

Ingredients
  

  • 10 tbsp + 2 tsp extra-virgin olive oil
  • tsp fresh lemon juice
  • ½ tsp lemon zest
  • 8 tsp water
  • blocks extra-firm tofu
  • tbsp white wine vinegar
  • 1 tbsp fresh parsley
  • ¼ cup olive brine
  • 2 medium cloves garlic finely grated
  • tsp dried thyme
  • tsp dried oregano
  • 1 tsp dried basil
  • ⅛ + ¾ tsp black pepper
  • ½ tsp salt
  • pinch red chili flakes

Instructions
 

  • Blend together all ingredients in a blender until a sauce forms. You may have to stop the blender and scrape down the sides as needed, to help it blend.
  • Pour the sauce into a serving plate. Use the back of a spoon to smooth it out and garnish with fresh herbs or desired toppings. (See the "More Recipes" section above for Roasted Herb Tomatoes that were delicious on this dip)!
  • Drizzle some optional extra virgin olive oil before serving. Then enjoy with pita chips, fresh veggies and all your favorite dipping items!
