- ½ cup unsweetened vegan yogurt
- ½ cup oat milk
- 3 tbsp black chia seeds
- 2 tbsp dry quick-cooking oats
- 2 tsp agave nectar
- 2 tsp freshly squeezed lemon juice
- 1 tbsp fresh lemon zest about 1 medium lemon // add more as desired
- pinch salt
- ¼ tsp vanilla extract
Mix together all ingredients in a medium bowl until a pudding-like consistency forms.
Place the yogurt mixture in the refrigerator for 20 minutes. After 20 minutes, the chia seeds will have thickened up.
Remove from the refrigerator after this time, and enjoy!
