Making yogurt, oats and chia pudding combination recipes is a great option when you need a quick but filling breakfast or snack. Overnight oats, yogurt fruit bowls and the most popular – the basic chia pudding recipe – have all become popular for convenient, healthy and quick breakfast recipes in the last few years. But what about combining yogurt, oats and chia seeds?

So for today, the yogurt provides a creamy base for the pudding parfait, the chia seeds fluff up with the added liquid, and the oats provide fiber to keep you full. This chia yogurt parfait contains healthy fats, protein, complex carbohydrates, fiber and more!

Why You’ll Love This Lemon Yogurt Chia Parfait

Sweet & Tangy Complements: The tanginess of the yogurt complements the refreshing lemon flavor here! Spring and summer are the perfect times of the year to pull out all those lemon desserts (yes to all the lemon curd), and this is no exception. The bright flavor of lemon screams warm weather, and pairing it with a light yogurt is oh-so-delicious. Agave nectar provides sugar to this recipe, which perfectly complements the lemon and unflavored yogurt. Feel free to add more sweetener as needed too.

Make it To-Go: Make this recipe in a small jar and pop the lid on top to make it packable. It’s a great little snack to carry with you on the go, and you can make it ahead, refrigerating it overnight for the next day’s meal prep. We love convenient snacking!

The prep time for this recipe takes about 10 minutes to zest and juice the lemon, along with getting all the ingredients together. Then you mix it all in a glass jar or a bowl until it’s a pudding consistency, before placing it in the refrigerator. The total time is about 30 minutes, factoring in the for the 20 minutes of chilling while the chia seeds fluff up and absorb the moisture.

Substitutions

Lemon: One fresh medium lemon will work to squeeze out the juice and to get the lemon zest from. Do not use bottled juice or dried zest, as the taste is not as fresh. Bottled juice also has a more acidic flavor.

Dry Oats: You can substitute the quick-cooking oats with rolled oats instead. Do not use steel-cut oats, as they will not be easy to digest uncooked.

Oat Milk: Substitute with another unflavored, non-dairy milk of choice such as almond milk or cashew milk.

Agave Nectar: Substitute with pure maple syrup (not pancake syrup)! Coconut nectar, date syrup, brown rice syrup or another liquid sweetener of choice may work as well. Note that they will all have varying flavor profiles.

Vegan Yogurt: I used Riviera brand of plain coconut milk vegan yogurt here. However, you can use any unflavored, plain vegan yogurt.
