Substitutions

Cashew Milk: Substitute with another non-dairy milk of choice. Soy milk will be a high-protein option, but coconut milk, unsweetened almond milk, oat milk or another plant-based milk can work too.

For the richest texture, use canned, full-fat coconut milk. Make sure it’s canned coconut milk and not from a carton, and not a light coconut milk version either. Although there will be a coconut flavor in the pudding, coconut milk will provide a very creamy texture.

Chia Seeds: Chia seeds are a specific seed that fluffs up when kept in liquid. They have a similar texture to small-pearl tapioca pudding. Do not substitute with another seed. Plus, they’re an excellent source of omega-3 fatty acids!

Maple Syrup: Use agave syrup or another liquid sweetener of choice.

Pure Vanilla Extract: Choose a high-quality vanilla extract, without additional caramel color or dyes. You can also use pure vanilla flavor, which is non-alcoholic so can’t have the “extract” label.

Fresh Mango: Fresh mango is in season during the summer! The best sweet mangoes can be found at Indian or general Asian grocery stores. You can also use frozen mango chunks in the puree, thawed at room temperature, if mangoes are not in season when you make this.

Green Cardamom: Do not substitute with any other spices, such as black cardamom. The flavor will be very different. You can find green cardamom at an Indian grocery store. Or, omit it and just keep the pudding vanilla flavor instead of vanilla-cardamom.

Ingredients
  

For the Chia Pudding

  • 5 tbsp chia seeds
  • 1 cup cashew milk
  • 1 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • pinch pink salt
  • 4 small green cardamom pods crushed into a powder

For the Mango Layer

  • 1 cup fresh mango blended into liquid

For the Topping

  • 2-3 tbsp fresh mango cut into small pieces

Instructions
 

  • Crush the green cardamom pods with a mortar & pestle. Remove the green shells, keeping just the crushed seed powder.
  • Mix together the chia pudding ingredients in a small bowl.
  • Pour the blended mango mixture into the base of a cup or a glass jar.
  • Add the chia seed mixture on top.
  • Top with fresh mango pieces.
  • Refrigerate for 15 minutes. Then enjoy!
