Granola is one of the best breakfast foods in my opinion (well, actually tied with chia pudding), as there’s so many flavor options and toppings you can mix with it. For this recipe, there’s no maple syrup, coconut oil or anything other ingredients required for traditional baked granola. Instead, it uses chia seeds, oats, dates, walnuts, dried blueberries and coconut, for a coconut blueberry flavor!

Chia seeds provide healthy fats, dates provide natural sweetness and the other ingredients help to add texture, flavor and bind it all together to make a crumbly dough, which is the raw granola texture. You can eat this in a parfait with vegan yogurt and fresh fruits, or even add some plant-based milk to make some raw cereal!

Oats: Use quick-cooking oats (instant oats) as a substitute for rolled oats.

Coconut: You can use sweetened shredded coconut flakes as a substitute. The recipe uses unsweetened coconut to avoid added sugars in the sweetened versions. I used long-flaked coconut, but you can use short desiccated coconut as well, although the texture won’t be the same.

Chia Seeds: This recipe uses black chia seeds specifically. However, white chia seeds, hemp seeds, flax seeds, sunflower seeds or pumpkin seeds can be used as well.

Dried Blueberries: Substitute with dried raspberries, dried strawberries, dried cranberries, dried apricots or another dried berry or dried fruit.

Walnuts: Substitute with raw slivered almonds, pecans, macadamia nuts, cashews or another raw nut.

Ingredients
  

  • cup Medjool dates pitted
  • 6 tbsp rolled oats
  • 2 tbsp shredded long unsweetened coconut
  • 1 tbsp chia seeds
  • 1 tbsp dried blueberries sugar-free
  • ¼ cup raw walnuts

Instructions
 

  • Pulse together all the ingredients for the granola in a blender. Do not fully blend it, but pulse it until there are chunks of nuts and dates, as a coarse-textured granola.
  • Once it reaches the desired consistency, remove the granola from the blender.
  • Pour into a bowl and add vegan yogurt, fresh fruits or milk to serve. Enjoy!
