- 2 small red potatoes
- 2 tsp avocado oil
- ¼ tsp pink salt
- 2 tsp vegan butter
- ¼ tsp black pepper
- ½ tsp dried oregano
- ¼ cup shredded vegan cheddar & mozzarella cheese mix
- vegan yogurt, cheese, sour cream or butter optional topping
- chopped bell peppers optional topping
- chopped chives optional topping
Heat oven ahead of time to 300 degrees F.
Scrub the potato skins, and prick potatoes multiple times with a fork or sharp knife. Rub the avocado oil over the potato, then rub with the ¼ tsp salt.
Grease or line a baking dish with parchment paper or a baking sheet. Place the potatoes on the tray and into the middle oven rack.
Bake for 1½ hours, until golden brown.
Once done, remove the potatoes from the oven and place on a heat-proof surface.
Slice potatoes down the centre. Top with dairy-free alternatives for melted butter, sour cream / yogurt, black pepper, oregano and any remaining cheese if desired. Enjoy warm!
