Ingredients
  

  • 2 small red potatoes
  • 2 tsp avocado oil
  • ¼ tsp pink salt
  • 2 tsp vegan butter
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • ¼ cup shredded vegan cheddar & mozzarella cheese mix
  • vegan yogurt, cheese, sour cream or butter optional topping
  • chopped bell peppers optional topping
  • chopped chives optional topping

Instructions
 

  • Heat oven ahead of time to 300 degrees F.
  • Scrub the potato skins, and prick potatoes multiple times with a fork or sharp knife. Rub the avocado oil over the potato, then rub with the ¼ tsp salt.
  • Grease or line a baking dish with parchment paper or a baking sheet. Place the potatoes on the tray and into the middle oven rack.
  • Bake for 1½ hours, until golden brown.
  • Once done, remove the potatoes from the oven and place on a heat-proof surface.
  • Slice potatoes down the centre. Top with dairy-free alternatives for melted butter, sour cream / yogurt, black pepper, oregano and any remaining cheese if desired. Enjoy warm!

Notes

  • Storage
    • Wrap the potatoes in foil and store in the refrigerator for up to two days. Reheat for 15 minutes at 350 degrees F in an air fryer or oven.
