Substitutions

Potatoes: This recipe uses medium-sized red potatoes. These are a popular choice in potato recipes for their tender texture and slightly sweet flavor. Russet potatoes will work great as a substitute due to their high starch content and thick skin. The high starch content results in a fluffy interior when baked, while the thick skin crisps up nicely.

Cheddar Cheese: There are multiple companies making vegan cheese. Choose your favorite brand to use here! My favorite way is to use a mix of mozzarella and cheddar, but you can also use just cheddar cheese or mozzarella alone.

Vegan Yogurt: Taste test vegan yogurt brands before finding your favorite – they can be hit or miss sometimes! I enjoy Riviera brand of plain coconut milk yogurt. There are many types of vegan yogurts out there, using almond, soy, oat, coconut and other bases.

Vegan Butter: Use a vegan margarine-type spread instead of vegan butter. Melt Organics makes delicious salted vegan butter sticks, which I use instead of dairy-based butter in any recipe that needs a butter substitute.

Avocado Oil: Use extra-virgin, virgin or regular olive oil instead.

Ingredients
  

  • 2 small red potatoes
  • 2 tsp avocado oil
  • ¼ tsp pink salt
  • 2 tsp vegan butter
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • ¼ cup shredded vegan cheddar & mozzarella cheese mix
  • vegan yogurt, cheese, sour cream or butter optional topping
  • chopped bell peppers optional topping
  • chopped chives optional topping

Instructions
 

  • Heat oven ahead of time to 300 degrees F.
  • Scrub the potato skins, and prick potatoes multiple times with a fork or sharp knife. Rub the avocado oil over the potato, then rub with the ¼ tsp salt.
  • Grease or line a baking dish with parchment paper or a baking sheet. Place the potatoes on the tray and into the middle oven rack.
  • Bake for 1½ hours, until golden brown.
  • Once done, remove the potatoes from the oven and place on a heat-proof surface.
  • Slice potatoes down the centre. Top with dairy-free alternatives for melted butter, sour cream / yogurt, black pepper, oregano and any remaining cheese if desired. Enjoy warm!

Notes

  • Storage
    • Wrap the potatoes in foil and store in the refrigerator for up to two days. Reheat for 15 minutes at 350 degrees F in an air fryer or oven.
