Today we are making a Kiwi Coconut Summer Refresher Drink Recipe! If you sometimes feel like swapping out our cup of coffee for a fruity drink, then this recipe is for you! One thing I love to do is make homemade versions of Starbucks popular drinks, such as the berry hibiscus drink, pink drink, pineapple passionfruit refresher and more sweet drinks!

Today’s tasty drink is the real thing using fresh fruits, similar in terms of tropical flavors, but not exactly the Starbucks version. The popular coffee chain drink contains a melody of different juices like a simple syrup, white grape juice concentrate and freeze-dried fruit, like freeze-dried kiwi pieces in their Kiwi Refresher for a strong kiwi flavor. But today’s drink is made with whole foods ingredients and is one of my favorite summer drinks! We don’t use kiwi-flavored juice, but rather real kiwi pieces. The bright green of fresh kiwi mingles with the creamy white of coconut milk to create a visual masterpiece that’s almost as inviting as the flavors themselves.

The magic of this drink lies in its combination of kiwi’s tangy-sweet notes and the creamy richness of coconut. Healthier than Starbucks: This homemade version of a refresher is not a Starbucks copycat recipe of the coffee giant, but was inspired by the drink! Starbucks Star Drink is described as Starfruit- and kiwi-flavored juice and real kiwi fruit pieces added to coconut milk and shaken with ice. Summer re-imagined. The ingredients are ice, kiwi starfruit refresher base, coconut milk and freeze-dried kiwi.

Now, this homemade drink uses all the same ingredients, but the kiwi chunks are in its fresh form (which is also easier to find than the freeze-dried version). Then, coconut water blended with fresh kiwi to make the “refresher base.” Much healthier, no artificial syrups or sugars, and no other additives or chemicals! Plus, you also get fiber from the kiwi directly.

Kiwi Coconut Summer Refresher Drink Recipe

Substitutions: Milk & Water

Coconut Water: Substitute the coconut water with non-dairy milk, such as cashew milk or almond milk. You can use more coconut milk to make the recipe taste richer. However, I don’t recommend to substitute the entire amount of water with full-fat coconut milk. This will make the drink will taste too rich. Use a low-fat milk like cashew milk, or pure coconut water.

Coconut water is more hydrating as compared to using vegan milk substitutes, and provides more of a balance between the creaminess of the coconut milk and some coconut water to dilute the drink, versus all milk.

Coconut Milk: Use full-fat, canned coconut milk. Check the ingredients on the label to make sure the milk contains as few chemicals as possible. I like Thai Kitchen brand coconut milk, which contains just coconut and water. Carton milks do not have the same consistency. They are also usually lower in fat which will make a watery drink if used.

You can also use a combination of pure coconut cream and more coconut water. Increase the amount of coconut water and decrease the amount of coconut milk. Use just half the amount of coconut cream instead due to how rich it tastes. You can experiment with different levels of coconut milk, coconut water and/or coconut cream.

Substitutions: Fruit & Sugar

Kiwi: Use fresh kiwis, slightly soft to the touch to ensure they are ripe. You can substitute this with fresh mango, fresh strawberries, fresh pineapple or another fruit to make differently flavored fruit drinks! Any sweet, fresh fruit will go great with coconut water as a refreshing drink.

Sweetener: After blending, if you enjoy your drinks on the sweeter side, then use a natural sweetener such as pure maple syrup as a liquid sweetener. This will mix in well with the rest of the liquid, versus a dry sweetener like xylitol. You can also use agave nectar or stevia drops to sweeten it.

  • Make this drink even richer by using more coconut milk instead of coconut water. Replace up to half the coconut water with the milk.
  • Make this a more tangy drink by adding a squeeze of lime juice!

Equipment

Ingredients
  

  • cup coconut water
  • medium kiwi peeled
  • ½ cup ice cubes
  • 3 tbsp full-fat, canned coconut milk
  • sweetener as desired
  • ½ medium kiwi peeled and cut into small pieces

Instructions
 

  • Blend together all the ingredients, except the kiwi chunks. Add additional sweetener if desired.
  • Pour the blender mixture into a cup. Mix in the kiwi pieces by hand.
