Why Chickpeas?

The secret ingredient in this recipe is chickpeas! While it may seem odd to use chickpeas as the main ingredient in a cookie dough recipe, these little legumes are packed with protein, fiber, and other beneficial nutrients. Chickpeas, also known as garbanzo beans, are a whole food plant-based ingredient that can be used in a variety of recipes, from hummus to curries and now, even in cookie dough.

By using chickpeas instead of flour, you’ll increase the protein content of your cookie dough. You’ll also get some healthy fats and fiber, which helps with digestion and keeping you feeling full. This sweet treat also uses other healthy ingredients. Oats, dates, and almond butter or applesauce, which adds a natural sweetness without being too overpowering.

Why You’ll Love This Chickpea Cookie Dough Recipe

Healthy Twist: If you’re looking for a healthy dessert that doesn’t sacrifice taste, this Chickpea Cookie Dough dip is perfect. Unlike most traditional cookie dough recipes, this one is made with wholesome, plant-based ingredients that offer numerous health benefits.

High Protein: One of the key ingredients in this recipe is chickpeas, as mentioned above. They are full of fiber, protein, and other essential nutrients. They can help reduce the risk of heart disease, improve digestive health, and promote weight loss. In addition to chickpeas, this recipe also includes rolled oats, which are a great source of fiber, and almond butter, which provides healthy fats and protein.

This recipe comes out between 42 to 48 grams of protein from the chickpeas alone, not to mention the almond butter and other ingredients!

One Blender Required: Another reason to love this recipe is that it is incredibly easy to make. All you need is a food processor and some simple ingredients to have delicious, healthy vegan cookie dough in just a few minutes. This recipe is also versatile, allowing you to make substitutions as needed to suit your preferences or dietary restrictions.

Substitutions: Dry Ingredients

If you don’t have all of the ingredients on hand, don’t worry! This recipe is very flexible and can be customized to suit your needs. Here are a few substitutions that you can make.

Medjool Dates: Soft Medjool dates are great in vegan and gluten-free no bake recipes, as they provide a natural and low-glycemic sweetener that won’t spike your blood sugar levels like white sugar can. If you don’t have Medjool dates on hand, you can use Deglet Noor dates, which has a similar sweetness and caramel-like flavor.

Another option is to use maple syrup or another liquid sweetener of your choice. Keep in mind that liquid sweeteners will alter the texture of the dough, so you may need to adjust the recipe accordingly.

Oats: Rolled oats are a common ingredient in chickpea cookie dough recipes, as they provide a chewy and hearty texture that mimics traditional cookie dough. If you don’t have rolled oats on hand, you can use quick oats. These are just rolled oats that have been cut into smaller pieces.

Another option is to use oat flour, which is made by grinding up rolled oats into a fine powder. Oat flour will give your cookie dough a smoother and more uniform texture. However, it may also make the dough denser and less chewy.

Substitutions: Wet Ingredients

Almond Butter: If you don’t have almond butter, you can use other nut butters like natural peanut butter or cashew butter. You can even use sunflower seed butter or unflavored and unsweetened applesauce for a nut-free option.

If using nut butter, the key is to choose one that has a similar consistency and flavor to almond butter. This way, it doesn’t drastically alter the taste or texture of the cookie dough.

Nut butters are typically an ingredient in chickpea cookie dough recipes as a healthy and protein-packed alternative to traditional cookie dough. So any of these substitutions will still give you that same health benefit.

Chickpeas: A can of chickpeas is the most convenient option for making chickpea cookie dough, as the chickpeas already ready to use. If you don’t have canned chickpeas on hand, you can use home cooked garbanzo beans or white beans instead. White beans beans have a similar texture and flavor to chickpeas. They can be swapped in most recipes. Just be sure to rinse and drain the beans before using them in your cookie dough.

Vanilla Extract: Vanilla extract is a common flavoring agent in cookie dough recipes. It adds a subtle sweetness and aroma that complements the other ingredients. I like using an alcohol-free vanilla flavor that does not contain caramel color or any dye (or alcohol). It has a stronger taste and smell too!

Substitutions: Chocolate

Chocolate Chips: If you don’t have vegan chocolate chips, you can still add some sweetness and texture to your chickpea cookie dough by using other ingredients. Chopped dark chocolate can be a good alternative, as it still provides the chocolate flavor and richness that most people crave in a cookie.

If you’re looking to switch things up, you could try peanut butter chips, which add a savory and nutty taste to the dough. Alternatively, you can omit the chocolate altogether and add chopped nuts. For example, walnuts or almonds, dried fruit like raisins, or other mix-ins of your choice.

If using chocolate, check the ingredient label to make sure your chocolate is vegan – that it does not contain any added milk products.

Chickpea Cookie Dough Recipe Notes

  • Make sure to drain and rinse your canned chickpeas thoroughly before using them in this recipe. You can also remove the chickpea skin for a smoother texture.
  • If you’re making this recipe for the first time, start with less salt and sugar and adjust to your taste preferences.
  • This recipe can be easily doubled or halved depending on how much cookie dough you want to make.
  • One way to eat this recipe is to dip apple slices or vegan graham crackers in it!
