Today we are making a sweet treat: a No Bake Lamington Coconut Balls Recipe! Ever heard of a Lamington before? Me neither – until recently. I was scrolling through Instagram and this coconut sponge cake kept popping up on my feed. “Lamingtons,” the caption would say, and I would scroll past it without batting an eye. However, I do find recipe inspiration everywhere I look! So eventually, I did Google what a Lamington really was. Turns out, it’s a classic Australian cake! It is usually made of a sponge cake coated in a chocolate sauce layer and rolled in shredded coconut. This chocolate and coconut flavor absorbs into the cake, leaving it with a delicious taste and texture.

it’s eaten year round as a dessert, but especially on a specific holiday such as Australia Day! Personally, I’ve never had one (or know of any place that sells them). But an idea popped into my mind – what if I made a raw vegan raspberry-flavored version? Voila, with a few simple ingredients, I had created this flavor, bursting with tart raspberry in the center, a hint of chocolate and a little coconut to roll it all in.

Popular Australian Cake Flavor: One of my favorite things to make is a no bake recipe with all raw ingredients. This easy recipe is a delicious healthy snack that’s a quick remake of the popular Australian Lamington cake. Fruit, chocolate and coconut lovers, this is a great recipe for your sweet tooth!

The total time for this no bake treat is also only 15 minutes, way quicker than making a Lamington cake!

Substitutions: Dry Ingredients

Cacao Powder: Lamingtons originally do have chocolate in them, so this cacao powder adds that chocolate flavor. It also helps to make it less sticky due to the dry powder. Substitute cocoa powder instead of cacao. Cacao is the raw, unprocessed version of cocoa.

Almond Flour: You can find this in the gluten-free, natural section or baking aisle of the grocery store. This makes it chewy and gives the dough a nice texture. The almond flour is ground up in such a way that it’s almost like a “buttery” flavor, which is why people try making almond flour shortbread out of it too! You could substitute this with cashews nuts.

Although the rest of the recipe uses coconut, I do not recommend to substitute coconut flour here.

Desiccated Coconut: The coconut inside the balls as well as the outside coating gives it the Lamington coconut flavor … twice! Coating it on the outside is the way to do it for this dessert, but adding some coconut to the inside doesn’t hurt either! You can use shredded coconut or coconut flakes to blend, but use desiccated coconut for rolling in, since it’s finer. You can use either unsweetened coconut or its sweetened counterpart, which usually contains refined sugars.

Substitutions: Wet Ingredients

Dates: Dates are a great addition and a binder for no bake desserts, since they also contain no extra added sugars. Without these, the dough would not stick together. I do not recommend to substitute any other ingredient for the dates. Raw maple syrup and dates are usually my go-to ingredients for sweeteners in most recipes.

Raspberries: This is a raspberry-flavored Lamington, so accordingly, there’s a raspberry stuffed in the center of each bite! Delicious and tangy, I would store these in the fridge or freezer, since the raspberries will get soggy at room temperature (if using frozen ones like I did). If you use fresh raspberries, you could keep it at room temperature but I prefer to keep it in the fridge – the balls firm up that way.

  • Make these extra tasty for a special occasion with a chocolate coating! Use vegan white chocolate or dark chocolate chips, melted and drizzled over top. This is a great option for an easy dessert recipe, as the bites will harden in the refrigerator to make a type of chocolate coconut truffles! Lamington cake is also covered with a chocolate sauce, which fits a melted chocolate topping perfectly. Almost like an almond joy candy bar with a fruity raspberry flavor!

This No Bake Lamington Coconut Balls Recipe is like a raw Lamington, an Australian sponge cake coated in chocolate and rolled in coconut!

Equipment

  • High-speed blender or food processor

Ingredients
  

  • 1 tsp cacao powder
  • cup soft Medjool dates pitted
  • ¼ cup almond flour
  • ¼ cup desiccated coconut
  • ¼ tsp vanilla extract
  • Pinch salt
  • 5 frozen raspberries
  • ¼ cup desiccated coconut for rolling

Instructions
 

  • Blend together all ingredients except the extra coconut for rolling, and the raspberries.
  • When the coconut mixture comes together, turn off the blender and shape it into 5 cookies.
  • Add a raspberry to the middle of each cookie shape, and wrap it up into a ball, so the raspberry is the middle filling.
  • Roll in the extra coconut.
  • Enjoy!
