Substitutions

Coconut Milk: Make sure to use full-fat, canned coconut milk. Low-fat or carton milks do not provide the most creaminess for this recipe. I prefer to use Thai Kitchen brand of canned coconut milk, as it doesn’t contain as many chemicals and preservatives as other brands of canned milk do. The taste is also very rich and doesn’t have that metallic taste that some canned foods do.

Limes: Do not substitute the fresh limes with lemon, or the recipe will not be limeade! Make sure to use fresh, ripe limes.

Agave Nectar: Substitute with pure maple syrup, where the only ingredient on the label should be maple syrup. You may also try another liquid sweetener, which may have a different taste. Taste test other sweeteners before using in this recipe. Add more as desired to get just the right amount of sweetness for your tastebuds.

Ingredients
  

  • 4 cups cold water
  • 2 fresh limes cut the ends of each lime off and remove the white pith
  • ¾ cup full-fat canned coconut milk chilled
  • ½ cup agave nectar
  • 3 cups ice
  • ¼ cup agave nectar for mixing in at the end

Instructions
 

  • Place limes along with the rest of the ingredients in a high-speed blender, including the whole cut limes.
  • Pour the blended mixture through a sieve to strain out the lime peel, into a large pitcher.
  • Mix in the extra tbsp of sweetener into the drink.
  • Pour the drink into 4 individual glasses. Add a lime wedge on the edge of each cup before serving (optional). Enjoy!
