Today we are making Healthy Vegan Tahini Freezer Fudge! Who doesn’t like fudge?! It’s the epitome of dessert – a rich chocolate fudge slice, or basically anything made with the cacao bean, right?! But today’s recipe doesn’t contain any cocoa powder or is even full-on chocolate. Instead, it’s a different type of fudge, an easy recipe (and the perfect healthy treat!) made of whole foods ingredients like creamy tahini, pure maple syrup and coconut oil.

Tahini, the main ingredient, is pure sesame seed paste, which adds a slightly bitter, nutty flavor. Combined with the sweetness of maple syrup and the properties of coconut oil, mixing these together allows the fudge to harden up in the freezer, becoming a chewier texture that you can enjoy as dessert!

Substitutions

Chocolate: Check the label to make sure the chocolate chips do not contain milk products and are vegan. Semisweet chips work best for the sweetest fudge. However, dark chocolate will provide a more bitter underlying taste if desired. I don’t recommend dark chocolate here, just because tahini is also slightly bitter. The sugar in the maple syrup and semisweet chocolate balances that out. Additionally, to keep this recipe refined sugar-free, use raw cacao nibs instead of chocolate chips.

Tahini: This is a Middle Eastern staple ingredient made of pure ground sesame seeds (aka, sesame butter), where the only ingredient on the label should be white sesame seeds. If you’re allergic or just not a tahini lover, you can still make this fudge! Substitute the tahini with peanut butter, cashew butter, almond butter, or another nut or seed butter for a different flavored fudge.

Pure Maple Syrup: This should be pure maple syrup, not pancake syrup. Pure syrup will only contain one ingredient on the label. You can substitute with agave nectar or another liquid sweetener, such as date syrup, brown rice syrup or coconut nectar with varying taste.

Vanilla Extract: Choose a non-alcoholic vanilla flavor (which doesn’t contain alcohol so can’t be labeled as extract) or a vanilla extract without any added caramel color or dyes.

Coconut Oil: Use refined coconut oil, that doesn’t smell or taste like coconut. Virgin or extra virgin coconut oil won’t work in this recipe in terms of taste. Cacao butter may be used as a substitute and a nut-free option. Do not use other oils such as avocado oil or olive oil, as they do not harden the way coconut oil does either.

  • Swap out the chocolate chips for vegan white chocolate chips and funfetti sprinkles, to make this party themed!
  • Although this is a freezer fudge, allow it to thaw at room temperature if you would like a softer texture, before eating.
  • Dried fruits like cranberries, apricots, or raisins can provide a chewy texture as add-ins!
  • Make this a salted tahini fudge by sprinkling some coarse sea salt on top, before freezing it.

Equipment

  • Small Saucepan or Microwave // to melt the coconut oil

Ingredients
  

  • 1 tbsp + 1 tsp refined coconut oil melted
  • ½ cup tahini
  • 2 tbsp + 2 tsp pure maple syrup
  • ½ tsp vanilla extract
  • 8 pinches pink salt
  • ½ cup vegan semisweet chocolate chips

Instructions
 

  • Keep in freezer
  • Mix together the melted coconut oil, maple syrup, tahini, salt and vanilla in a large bowl, until a creamy texture forms.
  • Once the fudge mixture is fully incorporated, mix in the chocolate chips.
  • Pour the tahini mixture into a loaf pan lined with parchment paper. You can choose two different tray sizes, one small tray and add the rest into cupcake liners, or into any shape. Make sure it is poured medium-thick, as in the photos.
  • Place the fudge in the freezer for about 2 hours to chill.
  • Once frozen, remove from the freezer and cut into 6 squares of fudge. Enjoy!
