Substitutions: Milk

Coconut Cream: You can buy a can of pure coconut cream at the grocery store. You can also find full-fat, canned coconut milk, and refrigerate this overnight to scoop out the white cream that rises to the top of the can the next day. The white stuff that comes to the top of the can once you open it up is all the coconut cream, whereas the coconut water will have separated to the bottom. If you give the can a shake before opening it, it’ll turn back into coconut milk versus staying separated (you want just the full-fat cream, not the milk though). You could use coconut milk instead, but only the canned stuff – carton milk isn’t the same.

However, even full-fat coconut milk won’t provide as rich a texture as coconut cream will, and even less so if you substitute the coconut cream or milk with a non-coconut based option, such as more oat milk or cashew milk instead. Eggs provide this thick and velvety texture in eggnog, which is what the fat in the coconut cream acts as.

Oat Milk: Oat milk works great in this recipe because of its slightly sweet and nutty flavor. However, you can substitute your favorite vegan milk with a neutral taste, like cashew milk, almond milk or another plant-based milk. To keep it refined sugar-free, choose your favorite vegan, unsweetened milk of choice that does not contain any added sugar.

I don’t recommend soy milk, because it tastes different when heated. Plus, the recipe already contains coconut cream, so to use coconut milk or more cream instead of the oat milk will make the drink taste too thick. I recommend a lower-fat milk in this case, which is another reason why oat milk was chosen.

Substitutions: Sugar & Spices

Spices: Warm spices such as ground cinnamon, nutmeg and cloves are the mixture of spices used in this eggnog. Do not substitute these with other spices. You can make these yourself by adding whole, fresh nutmeg, a cinnamon stick and cloves into a spice grinder to get freshly ground powder as well, or use pre-ground spices.

Maple Syrup: You can control the amount of sweetener as desired in this drink, so there is not as much sugar as regular holiday drinks would have. This makes two servings, with one tablespoon of maple syrup per cup. Add more as desired though! You can also substitute it with another liquid, natural sweetener, like agave nectar.

Vanilla Extract: For best results, use pure vanilla extract, without added artificial colors and dyes (like caramel color). You can use artificial vanilla flavor as well. However, it may come off as more bitter and not as smooth or sweet as the pure version.

  • Gay Lea brand makes delicious coconut cream based whip. This is usually next to the regular aerosol cans of whipped cream in the grocery store. For a non-coconut-base, ReddiWhip makes an almond based whip instead. There may be other brands providing soy-based whip instead of a nut-based one as well, depending on where you live.

  • ½ cup coconut cream
  • cups oat milk
  • 2 tbsp pure maple syrup
  • ¼ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • tsp ground nutmeg
  • 2 pinches ground cloves
  • vegan whipped cream optional topping

Instructions
 

  • Whisk together all ingredients, except the whipped topping, in a small saucepan over medium heat.
  • Allow it to come to a boil.
  • Once boiling, turn off the heat. Pour the hot milk mixture into a mug.
  • Top with optional vegan whipped cream. Enjoy!
