Why You’ll Love This Vegan Browned Butter Toffee Chip Granola Recipe

Irresistible Flavor: This granola recipe combines the rich, nutty notes of browned butter with the sweet crunch of toffee chips. The result? An utterly irresistible flavor profile that’s perfect for breakfast or snacking.

Crunchy Texture: The granola bakes up beautifully with a satisfyingly crunchy texture. Each bite is a delightful mix of crispy clusters and melt-in-your-mouth toffee goodness, creating a delightful contrast in every spoonful.

Substitutions

Oats: Quick-cooking oats were used in this recipe, but rolled oats (aka, old-fashioned oats) can be a substitute. It would be a good idea to break up the rolled oats into smaller pieces, similar to quick oats, in a spice grinder for a second until they’re smaller flaked. The maple syrup mixture may not properly stick to the full rolled oats otherwise, due to their larger size.

Pure Maple Syrup: This should be pure maple syrup, not pancake syrup. Pure syrup will only contain one ingredient on the label. You can substitute with agave nectar or another liquid sweetener, such as date syrup, brown rice syrup or coconut nectar with varying taste.

Vanilla Extract: Choose a non-alcoholic vanilla flavor (which doesn’t contain alcohol so can’t have that extract label) or a vanilla extract without any added caramel color or dyes.

Vegan Butter: The vegan butter is essential to the browned butter component of this recipe, which provides the toffee-like flavor when toasted on the stovetop. Melt Organics makes delicious salted vegan butter sticks, which I use anytime I want to substitute butter in a recipe. If you just want granola without the buttery taste, you can use refined coconut oil. This should not smell or taste like coconuts, unlike the virgin or extra-virgin types.

Chocolate Chips: Use vegan semisweet chocolate chips for best results in this recipe. Check the ingredient label to make sure your chocolate is vegan, and doesn’t contain any animal products. For a more bitter chocolate, you can try dark chocolate chips.

Ingredients

  • 2 tbsp pure maple syrup
  • 2 tbsp vegan butter
  • ½ cup quick-cooking oats
  • tsp pink salt
  • ½ tsp vanilla extract
  • 1 tbsp vegan semisweet chocolate chips

Instructions

  • Preheat oven to 325 degrees F.
  • In a small stovepan pan over low heat, add the vegan butter. Stir it around for 5-6 minutes, until it begins to sizzle. You will be able to smell the toasted butter at this point. Turn off the heat and set aside.
  • In a medium-sized bowl, add in the browned butter, along with the maple syrup, vanilla and salt. Stir to combine.
  • Stir in the oats. Lastly, stir in the chocolate chips.
  • Line a baking tray with a sheet of parchment paper or a silicone mat. Spread the granola out evenly on it. Bake for 15-16 minutes, until the oats are golden brown.
  • Remove from the oven and allow the granola to cool for 20 minutes on a heatproof surface. It will harden as it cools.
  • Once it's cooled down, add it into a bowl with your favorite plant-based milk and more chocolate on top, or store for later. Enjoy!
