Oat milk has a sweet and nutty flavor, which is the one used in this recipe for best results. For a richer option, use canned full-fat or light coconut milk. Canned coconut milk is usually creamier as compared to the carton version, plus coconut has a lot of healthy fats, making it richer in taste.

Chia Seeds: Chia seeds are a specific seed that fluffs up when kept in liquid. Do not substitute with another seed.

Maple Syrup: Use agave nectar or another liquid sweetener of choice. If using maple syrup, choose pure maple syrup (only one ingredient on the label) and not pancake syrup.

Vanilla Extract: Choose a high-quality vanilla extract, without additional caramel color or dyes. You can also use pure vanilla flavor, which is non-alcoholic so can’t have the “extract” label.

Cacao Powder: This is raw, unprocessed version of cocoa powder. You can also used regular unsweetened cocoa powder. For cacao, I love the brand Organic Traditions, or check out the natural aisle of your local grocery store.

Vegan Chocolate Chips: Check the ingredient list to make sure there are no added milk products in the chocolate chips (so they are vegan). For best results, use semisweet chocolate chips. For a slightly more bitter (and lower in sugar) option, use dark chocolate chips. You can even find refined sugar-free chocolate chips in the natural foods aisle of some grocery stores, to use an option that has no added sugar.

Ingredients
  

For the Chocolate Layer

  • 2 tbsp chia seeds
  • cup oat milk
  • 1-2 tbsp pure maple syrup
  • 2 tsp cacao powder
  • ½ tsp vanilla extract

For the Matcha Layer

  • 2 tbsp chia seeds
  • cup oat milk
  • 1-2 tbsp pure maple syrup
  • ½ tsp matcha powder
  • tsp mint extract

For the Topping

  • raw cacao nibs or vegan semisweet chocolate chips

Instructions
 

  • In two small bowls, mix together the chocolate layer ingredients and the matcha layer ingredients separately.
  • Add the chocolate layer into a glass cup. Top with the matcha layer.
  • Refrigerate for 20 minutes.
  • Top with vegan chocolate chips, raw cacao nibs or other optional toppings.
