Today we are making Vegan & Gluten Free No Bake Oatmeal Trail Mix Energy Bites! I love making easy snacks using wholesome ingredients that you can grab and go at your convenience when you don’t want to put any effort towards making a great snack. What’s better than having a pre-made, ready to eat energy bite full of nutrition waiting for you when you reach for a snack? Or having a snack to look forward to when you pack work or school lunches? It’s an awesome and satisfying feeling!

These energy bites are the perfect option for just that. The star of the show here is tahini, which not only provides a creamy texture but also a burst of nutty richness. We also have almond butter, containing healthy fats and adding a nutty flavor and almond flour and dry oats to form the base. Then we take it up a notch with a dash of salt, pumpkin seeds, and chia seeds, adding crunch, protein, and those essential omega-3 fatty acids. Substitutions

Oats: This recipe uses rolled oats / old-fashioned oats, but you can also try using quick-cooking (quick oats). For those with a gluten allergy, look for certified gluten-free oats.

Coconut Sugar: You can use brown sugar, but the recipe won’t be refined sugar-free then. Don’t substitute with agave or pure maple syrup, as the liquid sweetener won’t help to bind the recipe.

Chia Seeds: Omit or use flax seeds instead.

Oat Milk: Substitute with another unsweetened plant-based milk. To keep this recipe refined sugar-free, choose oat milk (or another non-dairy milk) that does not contain added sugar.

Almond Butter: Substitute with cashew butter, creamy peanut butter, or sunflower seed butter for a nut-free option.

Almond Flour: Use almond meal, or grind your owl almond flour with fresh almonds and a blender or blitz in the spice grinder. Bob’s Red Mill is a great brand for almond flour.

Vanilla Extract: Use pure vanilla extract, without added caramel color or dyes, for best results. You can also use vanilla flavor, which lacks alcohol (and therefore isn’t labeled as “extract”).

Tahini: This is sesame seed paste. Check the ingredient label to make sure that the only ingredient listed is sesame seeds.

Pumpkin Seeds: These are great for healthy snacking (and a good amount of plant-based protein!), and add a crunch to these cookies. You can use roasted or unroasted pumpkin seeds here. Usually, roasted pumpkin seeds have additional oils added to them. To avoid this, stick with the raw seeds. You can even toast them on the stovetop for 1-2 minutes on low heat to bring out the flavor, before using in this recipe.

These vegan & gluten free no bake Oatmeal Trail Mix Energy Bites are the perfect make-ahead snack, full of healthy fats and no refined sugar!

Equipment

  • Stovetop Pan

Ingredients
  

  • ¼ cup coconut sugar
  • tbsp tahini
  • 1 tbsp oat milk
  • ½ cup rolled oats
  • 2 tbsp pumpkin seeds
  • 2 tbsp chia seeds
  • 1 tbsp almond butter
  • 2 tbsp almond flour
  • ¼ tsp vanilla extract
  • pinch pink salt

Instructions
 

  • In a stovetop over low-medium heat, mix the first three ingredients with a rubber spatula. Bring them to a boil.
  • Once boiling, remove from heat and add in the vanilla and salt. Stir to combine, then add in the rest of the ingredients.
  • Stir the mixture until all ingredients are incorporated and the dough can be shaped easily.
  • Shape the dough into 6 balls and place in a container or on a tray lined with parchment paper. Refrigerate for at least 30 minutes, or until hardened. Enjoy!
