This easy fudge recipe doesn’t use a candy thermometer, instead opting to boil the butter and sugar on the stovetop, then stir in the rest of the ingredients and refrigerate to have your fudge ready and chilling in no time!

Just Five Simple Ingredients … Okay, Six … or Seven. Delicious Treat Either Way!: I mean, seven if you count the chocolate chips as an add-in … or if you count salt as an ingredient! But really, we can say five ingredients because if you’re cooking anything at all, you probably already have some salt on hand. You can also omit the chocolate chips to just make this easy peanut butter fudge, in which case you still have five ingredients.

What I mean to get at is, there are just a handful of ingredients in this delicious recipe. Icing sugar, peanut butter, brown sugar, chocolate chips, vegan butter, vanilla and a pinch of salt make up this seven … six … or let’s just say, five ingredient peanut butter fudge.

Substitutions

Peanut Butter: Use creamy, natural peanut butter. Natural peanut butter only contains one ingredient on the label – peanuts! The oils should rise to the top of the container (which is normal). Becuase of this, you’ll have to give it a good stir before using it. Crunchy peanut butter does not have that same smooth feeling because of the little bits of peanuts within.

Brown Sugar: I used light brown sugar here, but you can also use dark brown sugar.

Vegan Butter: Melt Organics make delicious salted vegan butter sticks you can use for this recipe. Make sure not to choose a maragine-style spread! It will not act the same way.

You can try to substitute with refined coconut oil, not virgin or extra-virgin. It should not smell like coconut though.

Icing Sugar: This is also known as confectioners sugar or powdered sugar. You can try to use powdered xylitol for a healthier sugar substitute. Powdered monkfruit sweetener or erythritol may work for a keto option.

Vanilla Extract: Choose a high-quality vanilla extract, without additional caramel color or dyes. You can also use pure vanilla flavor, which is non-alcoholic so can’t have the “extract” label.

  • Switch it up by trying dark chocolate chunks or white chocolate in this fudge instead of semisweet! Even coconut flakes, toasted pecans or walnuts will make delicious add-ins as well.

Ingredients
  

  • ½ cup vegan butter melted
  • 2 cups brown sugar
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 3 cups icing sugar sifted through a sieve before using
  • pinch pink salt
  • ½ cup vegan semisweet chocolate chips optional

Instructions
 

  • In a pot over medium heat, add in the butter and sugar. Continue to stir until it comes to a rolling boil; allow it to boil for one minute.
  • Turn off the heat, stir in the peanut butter, vanilla and salt.
  • Stir in the icing sugar until a mixture forms. Pour the mixture into a large bowl, and allow it to sit for a half hour in the refrigerator to cool down.
  • Then, stir in the chocolate chips. If you stir them in before the mixture has cooled, they will melt.
  • Spread the peanut butter mixture evenly into a prepared pan lined with wax paper.
  • Refrigerate for at least 2 hours, until firm.
  • Use a sharp knife to cut the fudge into 16 servings. Enjoy!
